We have a container of half & half at the office that is going to go bad soon, but no one uses it in their coffee. Can I use half & half in a quiche recipe?

Oh yes. I always use it as a substitute for either milk or cream since I always need to use it up too.

You can certainly use half & half in quiche. In fact it makes for a much more rich quiche. If you are scared to use straight half & half just cut it with a little water & whisk. Don't whixk to much or you'll get whipped cream. Good luck!

I normally prefer half & half for my quiches. Seems to set better than milk, and all that extra cholesterol, especially in a Lorraine, seems somehow perversely satisfying.

Yes, That is what I usually use for my quiche. It comes out creamier.
