This is one that's easy and my husband swears by it.

1 refrigerated pie crust
2/3 cup sugar
1/3 cup butter/marg melted
1 cup light corn syrup
Pinch of salt
3 large eggs
1 cup pecans or pieces

Heat oven to 375. Mix everything but the pecans until well blended. Stir in the pecans. Pour into the crust. Bake for 40-50 minutes. (You might put some foil on the edges of the crust at first to keep it from being over-browned.) Cool and eat!

Pecan Pie

1 1/4 cups sugar
1/2 cup light corn syrup
1/4 cup butter or margarine
1 tsp vanilla extract
3 eggs, slightly beaten
1 cup pecans, cut up
1 unbaked pie shell

Combine sugar, corn syrup and butter in saucepan. Bring to boil on high, stirring constantly until butter melts. Remove from stove, gradually add hot syrup to beaten eggs, stirring constantly. Add pecans and cool to lukewarm; add vanilla. Pour into pie shell. Bake in 350 degree oven for 40 to 45 minutes.

CHEESY TUNA NOODLE CASSEROLE 1 (12 1/2 oz.) can chunk light tuna in water 1 pkg. frozen vegetables 1 (12 oz.) pkg. wide egg noodles Season to taste 1 can cream of mushroom soup 1 1/2 c. milk 1 (8 oz.) container sour cream 1 1/2 c. grated Cheddar cheese 1 1/2 c. grated Mozzarella cheese Cook and drain vegetables. Heat soup, milk, and sour cream. Blend until smooth. Cook and drain noodles. Mix all ingredients together with tuna and 3/4 cups each of Cheddar and Mozzarella cheese. Pour into 9 x 13 inch pan. Top with remaining cheese and bake in 350 degree oven for 20- 25 min minutes.

For crust
1 1/3 cups all purpose flour
1 teaspoon sugar
1/4 teaspoon salt
1/3 cup chilled solid vegetable shortening, cut into small pieces
1/4 cup (1/2 stick) chilled unsalted butter, cut into small pieces
2 tablespoons (about) ice water
For filling
1 cup sugar
3 large eggs
1/2 cup light corn syrup
3 tablespoons unsalted butter, melted
2 teaspoons vanilla extract
1 3/4 cups chopped pecans




Make crust:
Mix first 3 ingredients in processor. Add shortening and butter; cut in using on/off turns until mixture resembles coarse meal. Blend in enough water to form moist clumps. Gather into ball; flatten into disk. Wrap in plastic; chill 1 hour.
Roll dough on floured work surface to 13-inch round. Transfer to 9-inch round cake pan with 1 1/2-inch-high sides. Trim to align with pan edges. Freeze 15 minutes.

Make filling:
Preheat oven to 350°F. Whisk first 5 ingredients in medium bowl to blend. Mix in 3/4 cup pecans. Pour into crust. Sprinkle with 1 cup pecans. Bake pie until set, about 1 hour 15 minutes. Transfer to rack; cool.

The absolute easiest is on the corn syrup bottle itself.
I had a friend add chocolate chips once to a pie she made for me.
She added 3/4 cup to the regular pie recipe. It was marvelous.

SOUR CREAM PECAN PIE:
Ingredients in this pecan pie recipe include sour cream, egg yolks, brown sugar and vanilla and pecans.
INGREDIENTS:
1 9" pie pastry shell, baked
3 egg yolks
1 cup sour cream
1 cup sugar
4 tablespoons cornstarch
1/4 teaspoon grated lemon peel
pinch salt
3 egg whites
1 cup brown sugar
1 cup chopped pecans
2 teaspoons vanilla
PREPARATION:
Combine in top of double boiler the egg yolks, sour cream, sugar, cornstarch, lemon peel, and the pinch of salt; cook over simmering water until thick enough to coat a spoon.
Pour the mixture into the cooled pie shell.
Beat the egg whites and a pinch of salt together until they begin to stiffen, then add the brown sugar and pecans gradually, beating all the time.
Spread the pecan meringue over the custard, spreading all the way to the pie shell.
Bake at 400° just until the top browns. Watch carefully.

MOCK PECAN PIE:
This pecan pie is made with eggs, pecans, corn syrup sugar, butter, lemon juice, and vanilla.
INGREDIENTS:
1 cup pecan halves
1 unbaked 9-inch pie shell
4 large eggs
1 cup dark corn syrup
1/3 cup granulated sugar
1/4 cup butter, room temperature
1 tablespoon lemon juice
2 teaspoons vanilla
dash of salt
PREPARATION:
Sprinkle pecans in pie shell. In large bowl beat together remaining ingredients; pour over the pecans. Bake in preheated 350° oven for 35 minutes or until knife inserted in center comes out clean. Cool pecan pie on rack. Serve with whipped cream or ice cream.
Pecan Pie serves 8 to 10.

PECAN CREAM PIE:
INGREDIENTS:
1 prepared pie shell, 9-inch, baked
1 3/4 cups granulated sugar, divided
1 cup heavy/whipping cream
4 eggs, separated
1 cup pecans, coarsely chopped, toasted*
PREPARATION:
In a heavy saucepan, cook 1 cup of the sugar and the cream for 12 minutes, stirring occasionally. Beat egg yolks. Stir about 1/4 of the hot mixture into yolks, then return yolk mixture to pan and continue cooking and stirring another 2 minutes, until thickened and smooth. Remove from heat. Add pecans and pour into pie shell. Make meringue by beating egg whites until stiff. Add remaining 1/2 cup of sugar gradually, beating until glossy. Cover pie with meringue and bake at 325 degrees for about 20 minutes. Cool thoroughly before slicing. This pie is best served the same day. Store leftovers in the refrigerator.
Serves 8.
*To toast nuts, spread out in a single layer on a baking sheet. Toast in a 350° oven, stirring occasionally, for 10 to 15 minutes. Or, toast in an ungreased skillet over medium heat, stirring, until golden brown and aromatic.
