I have some potatoes that are a little soft and budding. I would like lightly fry them in olive oil. Will they be okay to eat if I remove the buds?

I don't want to get sick but it is a pain to get to the store after work.

Thry are ok as long as they are not totally greem inside--I've eaten them before when I was low on cash and never got sick

They are fine. Unless the potatoes are visibly rotting or have mould on them, there's no problem.

Vegetables are pretty easy to spot once they've hit "bad". The softness may affect the taste and consistency, but won't make you sick. DO remove the buds, however. They can be nasty for you.

They are abit harder to peel but soft spuds are ok to eat,even if they are budding. Now, if your spuds are soft and filled with yucky green or black spots, step away from them!!

They should be fine, but you might want to peel the skin off entirely.
