Does anyone have any tips on grilling chicken on an indoor grill. For some reason it never comes out right. Either too dry or just doesn't taste right. I want know like what temp to cook at. When to turn the chicken over and how to tell it is fully cooked. Plus any other tips you may have.

Grilling chicken is tricky: you want to sear both sides, but cooking the inside to the correct temperature causes the outsides to overcook. Here's what you do:

1. Sear the first side until grill marks appear (4-5 mins)
2. Flip the breast over to a fresh part of the grill (if available) and cover (for an inside grill) until the heat inside reaches the appropriate temp (165 for white meat). Probably ~10 mins or so.

This will make the grill into a makeshift oven, and cook the chicken properly. Also, the heat coming from the bottom will create grill marks on the "other" side of the chicken breast.

Let your chicken get to room temp prior to grilling. Take it out of the fridge about 45 minutes before you intend to grill.

Use low/medium heat.

Turn on grill about every 5 to 7 minutes until juices run clear, or until temp reaches about 160 degrees F.

After cooking is complete, cover with foil and let rest about 5 minutes before serving.

cook it at a lower temp(225-250) and just be patient. if you want to, you could always use 2 cups oil and 1/2 cup vinegar for a marinade. the way i make sure its done is cut open a little piece and make sure its not still pink.
