I would think it depends on if you are Mormon, and for what reason you're in charge of lunch. For example, if you're not Mormon and are in charge of lunch because it's some fairly formal occasion like a meal before or after a wedding, then you would want to serve something a lot different than if it were just a lunch meeting with a predominantly Mormon group. Either way if you're not Mormon, you want to stear clear of some things like coffee, tea, alcohol, and maybe even sodas. Instead try water, Kool-Aid, juice.
If you are Mormon, then do as Daisy suggested and delegate. Your fellow Sisters in the gospel will have a pretty good idea of what will go over well.
Again, it would greatly depend on the event. A VT workshop lunch? Or an after the block of meetings on Sunday lunch? Is it business related, or more of a social gathering? Will paper and plastic ware be used, or will you use real plates and metal flatware? Is it a mixed group (men and women) or just one or the other? Women tend to prefer soup and salad, while men tend to want something a little more filling. If you're using the real stuff and not paper plates, then you could probably get away with serving things that might roll or soak through a paper plate, which might stain clothing and/or table clothes. A more business related meeting should probably not include things that drip, stain, cause bad breathe, get stuck in your teeth, etc. However, a more social gathering could include something like build your own nachos, or those little weenies with bbq sauce.

Hmm, usually I see cold cuts and cheese to make your own sandwiches, either using small white rolls (although whole wheat would be better) or croissants. Fresh fruit and veggies. This would be the least amount of effort. Maybe have both regular and spicy mustard, and mayonnaise or Miracle Whip. Maybe some chips or pretzel sticks.

Mormons are just like any other groups when it comes to food. They like a wide variety of food. Serve whatever is common in the area you are in.
They can not drink coffee, tea,or alcohol.

Same types of food you would do for any group of people; there's diverse tastes in group. Personally, I like international and ethnic foods. But, you do have those that are meat and potato types. I'd just make what you like, that way at least your satisfied.

Seriously us LDS folks are pretty good about cooking our share of food for these kinds of things. Get someone to bring a salad, split up some sandwich makings for people to bring, get someone else to bring water or juice...and all you got to worry about it the utensils and seating.

If you serve soda know that some choose not to drink caffeine
Make it a non-smoking environment if possible.
Besides that, serve and do whatever you normally would do.
