time and temperature abuse are the primary causes of food spoilage. If your food is left between 40 and 140 degrees F, it is in the temperature zone in which bacteria grows fastest. 24 hours is a LONG time for bacteria to be multiplying.

Sometimes I forget and leave stuff out too. Technically, under the rule restaurants use, it would not be acceptable. However, if you are eating in your own home it's up to you to make the call. If it's cool in your house, which I assume it is because it's Winter, then I would think it would PROBABLY be ok, especially if you reheat it and let it boil again for atleast 1 minute to kill off any funk that might have settled. That's what I do at home anyway. In the Winter only, never in the hot months. And Never professionally, and I am a caterer.

As per Baron Von Lipwig's response, food is not to be left in that temperature range for more than 4 hrs. It may not spoil in 24 hrs but it will become the breeding ground for bacteria.

well 24 hours is big gap. you should refrigerate all food before it get's cold or hot depend on what it is. it the warm stage when food likly to grow something that will make you sick. all the white sauces that i can think of have milk or cream in them plus alot of times meat is added too. would you be willing to drink a glass of milk that has set out for 12 hours or 23 hours? would you eat a chicken meal that has set out for 12 hours or 23 hours?
