Sugar snap peas are so good- crunchy and a hint of sweet
Carrots- the little baby kind
Bean sprouts
Celery- totally different texture
A little bit of KimChee- gives it a different taste of spicey-ness

Courgettes and zucchini are really tasty as they soak up all the curry flavours. Bok Choi (I think that's how its spelt - the Chinese cabbage) also adds a lot of flavour, or baby spinach leaves if you can't find any. Also, try some water chestnuts - they don't really have much taste themselves but they will soak up the flavours and will give the curry a bit more texture as they are meant to be served while still quite crunchy. Just add them in towards the end - less than 5 minutes before you want to serve the dish.

I add courgettes and baby sweetcorn to mine. chop the courgette into thick slices and then chop the slices into quarters. the baby sweetcorn i slice length ways.
