a bacteria is added to the milk which is then kep in a warm environment. the bacterias ferments the milk (effectivley souring, hence why many yog products have sugar in them)
the name come from the middle / far east. there are several variations including Yogurt, Yoghourt.....
It found natively in Turkey accross the east to India
