I'm pretty sure that if Jesus existed, he lived till he was in his thirties. Why do people call him baby Jesus?
Examples:
"She's gone to heaven to see baby Jesus."
"Lies make baby Jesus cry."

Because to call HIM a baby is to ignore what HE did on the cross and that He was resurrected. To keep HIM a baby means to forget the message that He preached. To keep HIM a baby is to ignore the power of God and the consequences of their choices to reject HIM. My thoughts...

I also don't think there is any theological statement in those sayings. However, there is some correctness in them.
Most likely people call Him "baby Jesus", because on many icons he is drawn as a baby held in the hands of Mary the Theotokos (or God-bearer). He, as pre-existing God, chose to come down from heaven and become a baby for our salvation. Since the life of God is timeless there is some truth in calling Him "baby Jesus", because there was time when He was a baby here on Earth.
Does it make sense?

It's a tradition that has morphed into something that is not necessarily good. Baby Jesus has conotation of the Nativity and the Immaculate conception. I don't necessarily think that by referting to Jesus as baby Jesus means you ignore his sacrifice because as Christians, we know that even as a baby, Jesus was already destined to die for us on the cross. I think mainly, people use it to manipulate little kids.

Probably because babies are cute, no one likes to upset them, and "Baby Jesus" rolls off the tongue.

Exactly. It's because of ignorance or a fundamental misunderstanding or lack of information due to erroneous religious tradition/teaching.
