Yes, it is very easy and advisable to do all of your trip planning while you are in the country. It doesn't give you much of a vacation plan, but you'll end up saving money that way! If you want a nicer hotel than you may want to book before you leave, depending on what season you plan on leaving. If you are both comfortable in hostels than there is no need to book ahead of time. Once you get to Quito, just head to the Mariscal area and you'll find a ton of travel agencies where you can get a better idea of what is available and the best prices. You can organize your own excursion to the Galapagos by buying a plane ticket and staying for the amount of time you'd like (it is usually cheaper to go through a travel agency for the ticket, but there's plenty of internet cafes to find a cheaper fare. The airline going to the islands is Tame). The Amazon is a bit tricker. If you want the full-on excursion, you'll have to go through a travel agency because they don't let individuals go to the area without guides. You'll have some freedom to choose what to do with the agencies~go on a hike, canoeing, etc. The guides are able to cater to individual needs since the groups are generally very small (4-6 people). If you're happy with hikes during the day and heading back to the town for a stay in a hostel than you can head to Tena or Mindo. You'll be able to do whatever you like, whenever you like (within reason). Have a blast!

both Quito and Guayaquil have good 5 stars hotels. i haven't visited Quito in a while but i can tell you in Guayaquil we have the Hilton hotel, Sheraton, Howard Johnson's and they are now building the Marriott hotel. they are all 5 stars hotels. and you will find that service is excellent wherever you go in Guayaquil and food is great.

if you decide to fly out to Guayaquil i can recommend a travel agency i know to get the tickets to go to the Galapagos. or you can check the websites. i think its better if you go by boat and come back by plane. that way you enjoy more the ride to the islands.

please feel free to contact me. I'll help you as much as i can. i can also ask my mom for any other questions you might have or help.

To fly to Quito would be an easy thing, many airlines fly there. For example, American flies there from Miami, the trip takes about 4 hours and it will cost you around $1000 round trip for both of you. As for the Galapagos trip, check out the website below. And also remember, you'll need a passport in good standing. I've never been there myself, so I couldn't tell you about hotel eccomodations. However, Quito is a capital city, therefore I assume it should have fairly good hotels or guest houses. Have a nice trip.
