I don't think so, since the gluten in Arborio rice will develops during the cooking time while you're stirring and adding the liquid for a creamy results!

Absolutely not as the starch in the rice is what gives it a creamy texture. If you rinse the rice you will loose some of this starch.
BTW, for the other poster, gluten is in flour not rice.

NO...don't rinse the rice. Risotto is supposed to be gummy, and the starch helps this.

NOOOOOOOOOOOOOOOOOOOOOOO. This will prevent you from getting a nice risotto. You will need all the starch you can get to get a nice risotto.
