I always spray my pan with non stick spray and beat the eggs in a bowl first. When my pan is heated a little, I add some dried chopped onion and brown them, then i pour in my eggs and cook those until almost done. Make sure they are still a little wet when you take them out-they will cook a little after removing from heat. I always add a little salt and pepper while cooking and sometimes a little shredded cheese before removing from the pan. YUMMY!!! OH-MY KIDS LOVE THESE!!

very easy - simply crack some eggs in a bowl, add some cream, seasoning, even chopped parsley, spices, anything you want, and beat them until consistent.

My mom said do not add milk or cream it makes them tough. Use a little water; results will be light and fluffy. Also she was adamant about when eggs are cracked into the bowl before whipping, make sure to take the mucousy bits out of them.
