Try the following
450g (1lb) Caster Sugar
235ml (8floz) Water
110g (4oz) Butter
6 Drops Lemon Essence
Put the water and sugar into a brass pan and heat gently.
Cream the butter.
When the sugar is dissolved, add the butter.
Keep stirring over the heat until it sets, when a little is poured on to a buttered dish.
Just before the toffee is done, add the lemon essence.
Butter a dish or tin, pour in the mixture.
When cool, it will easily separate from the dish.

This tasty toffee is covered in chocolate and sprinkled with nuts - and it won't stick to your teeth.
Ingredients
1 tbsp Plus 2 cups butter (no substitutes), softened, divided
2 cups Sugar
1 tbsp Light corn syrup
1/4 tsp Salt
1 cup Milk chocolate chips
1 cup Chopped pecans
Preparation
Grease a 15x10x1 inch baking pan with 1 Tbsp butter; set aside. In a heavy 3-quart saucepan, melt the remaining butter. Add sugar, corn syrup, and salt; cook and stir over medium heat until a candy thermometer reads 295 (hard-crack stage). Quickly pour into prepared pan. Let stand at room temperature until cool; about 1 hour.
In a microwave, melt chocolate chips; spread over toffee. Sprinkle with pecans. Let stand for 1 hour. Break into bite-sized pieces. Store in an airtight container at room temperature. Yield: about 2 pounds
Cook's Notes
It is recommened that you test your candy thermometer before each use by bringing water to a boil. The thermometer should read 212. Adjust your recipe tempurature up or down based on your test.

The first recipe given is the best one for the candy toffee. Just make sure that you keep your toffee in the oven to cool, especially if it's humid outside. Humidity can wreck a pan of candy very quickly. Here is another recipe for you to try for Toffee BARS. This is not a candy, but I discovered this recipe in 1992 in a Hershey's cookbook and it's the best and closest to toffee candy flavor I've ever found. :) EASY too.
ENGLISH TOFFEE BARS
Ingredients:
2 cups all-purpose flour
1 cup packed light brown sugar
1/2 cup (1 stick) butter
1 cup pecan halves
TOFFEE TOPPING(recipe follows)
1 cup HERSHEY'S Milk Chocolate Chips
Directions:
1. Heat oven to 350°F.
2. Combine flour and brown sugar in large bowl. With pastry blender or fork, cut in butter until fine crumbs form (a few large crumbs may remain). Press mixture onto bottom of ungreased 13x9x2-inch baking pan. Sprinkle pecans over crust. Prepare TOFFEE TOPPING; drizzle evenly over pecans and crust.
3. Bake 20 to 22 minutes or until topping is bubbly and golden; remove from oven. Immediately sprinkle milk chocolate chips evenly over top; press gently onto surface. Cool completely in pan on wire rack. Cut into bars. About 36 bars.
TOFFEE TOPPING: Combine 2/3 cup butter and 1/3 cup packed light brown sugar in small saucepan; cook over medium heat, stirring constantly, until mixture comes to a boil. Continue boiling, stirring constantly, 30 seconds. Use immediately.

3/4 cup brown sugar (packed)
1/2 cup butter
1 cup chopped walnuts
1/2 cup semi sweet chocolate chips
Butter a pan. Spread nuts in pan. Heat sugar and butter in medium size saucepan until boiling. Lower heat to medium. Boil over medium heat for 7 minutes. Spread over nuts in pan. Sprinkle chocolate chips over hot mixture Place a cookie sheet over pan to melt chocolate chips. Cut into squares while hot, then refrigerate until hard.
