If you want to see the non-commercial, hidden NYC then you need to go to the outskirts/fringes of the city.

The city began south of City Hall, so there is lots of hidden history down there to explore. The oldest restaurant is there, along with old churches and the city's oldest cemetery.

You can also explore the Lower East Side and Alphabet City. Look for the community gardens, the Tenement Museum and the parts of Chinatown that are not on Mulberry Street or Canal Street. Plenty of small streets and alleys for you to explore.

On the other side, go to the very Northern end of Manhattan and see the Cloisters!

Take a walk from Central Park to the Village. You'll see many slices of life. Goto China Town -- there used to be a nice homey restaurant at 16 Mott Street. Wander -- and you'll see the real New York City.

I would head down to Soho. The shops their are really great boutique style shops which have different stuff in and are reasonable cheap by New York standards. They also have some lovely tiny restaurant around there with great Italian food.
Chinatown is also an experience.
