I have made chocolates but they melt when kep out of refrigerator for a long time, even after chocolate wrapping them

Temper the chocolate. Melt 3/4 the chocolate to above 110 degrees (but less than 120 or it will burn) and add the solid pieces a few ounces at a time until it cools to 87 - 91 degrees for semi-sweet or dark chocolate and 84-88 for white and milk chocolate. The hard part is holding the chocolate at this temperature. (I use the Alton Brown method of putting heating pad with variable temperature control in a large mixing bowl, then putting a metal mixing bowl with the chocolate on top of the pad - it's easier to control the temperature)

Alternatively, never let the chocolate get above 90 degrees and it should hold onto its original temper.

If the chocolates you're making are truffles they will melt in at room temperature unless you coat them with chocolate. Honestly it's easier to keep them in the fridge.

Science follows below:
Chocolate is tempered when the cocoa butter sets up a crystal formation. When chocolate is melted the formation is lost. When you control the cooling you are allowing time for the crystals to set up and harden the chocolate. These crystals give the tempered chocolate a higher melting point than solid (but untempered) chocolate has. Tempered chocolate will have a sheen and a snap that untemperred chocolate does not have.

Keep them in a COOL dark dry place.Also if you are adding oil to thin out your choc then you are adding too much.
