I love pineapple. I have been fortunate to have been to Hawaii several times, and my favorite tour is the Dole Pinapple Plant on the island of Oahu. There, they teach people how to choose a ripe pineapple. It must be golden in color and firm to finger pressure. Pull out the top leaves...easy is ripe, tough isn't ripe yet. Thump like you thump a watermelon on the middle of the fruit. It should sound rich and deep, again, like a watermelon. Last test, smell at the base of the fruit. It should smell rich and fruity. If it smells tangy, it is too ripe, and will have started to turn vinegary. UGH! Dole ships to stores its boxes of pineapples about two weeks unripe. That way they have a 2-3 week period that the fruit can sit in the store before they become too ripe. I have tried other brands of pineapple(fresh and canned) and NONE can match the taste, smell and natural sweetness of Dole. Also, the best flavor for fresh pineapple is at room temp (70-80 degrees F). They should be refridgerated until the morning before serving. Take the fruit out of the fridge and let sit. Cut shortly before serving. Refridgerate any leftovers, and wrap with plastic tightly, or put in a plastic snap tight container for it is easy to taste like other foods are in it after opening. In India, we judge a pineapple's ripeness and quality by snapping a finger against the side of the fruit. A good, ripe fruit has a dull, solid sound, while rawness and/or poor quality are indicated by a hollow thud.

The fruit should be dense, with a fresh green top. The skin will probably be a golden yellow. But I find the *best* indicator of ripeness is the scent. Just pull them out of the produce bin and take a good sniff of the skin. The more sweet and 'pineappley' it smells, the riper it will be.

If the bottom of the pineapple is a golden ring, then it is ripe and ready to eat.

Grab a pineapple and pull one off the green pointy things from the top.If it comes out easily then it is ripe.If you have to pull hard then it is not ripe.

It should be golden, no green. Then I rely on the 'sniff test' from there. Does it smell all 'pineapple-y'? Well, then it's ripe.
