Mayonnaise Cake

"Mayonnaise makes this cake nice and moist."
Original recipe yield: 2 -8 or 9 inch layers.

INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

Chocolate Chip Cheesecake


Makes one 10-inch cheesecake
Prep Time: 30 minutes
Bake Time: 50-60 minutes

Crust
1 cup oats (quick or old fashioned, uncooked)
1/3 cup finely chopped almonds
1/3 cup firmly packed brown sugar
1/3 cup Butter Flavor CRISCO Stick or 1/3 cup Butter Flavor Crisco all-vegetable shortening, melted
Filling
3 (8 ounce) packages cream cheese, softened
1 cup granulated sugar
1 -1/2 teaspoons vanilla extract
3 eggs
1/3 cup milk or strong coffee
1 cup (6 ounces) mini semisweet chocolate pieces
2 teaspoons Pillsbury BEST® All-Purpose Flour

Heat oven to 350°F.

Crust:
In a medium mixing bowl combine all ingredients; mix well. Press onto bottom and 1-inch up sides of 9-inch springform pan.
Bake 10 to 15 minutes or until golden brown. Cool completely.

Filling:
In the bowl of an electric mixer combine the cream cheese, sugar and vanilla extract; beat at medium speed until fluffy. Add eggs, one at a time, beating well after each. Gradually mix in milk. Reserve 1 tablespoon chocolate pieces; combine remainder with flour. Stir floured chocolate pieces into cream cheese mixture; pour onto crust. Sprinkle with reserved chocolate pieces.
Bake 50 to 60 minutes (45 minutes for 13x9-inch) or until almost set. Cool completely; loosen side with knife and remove rim. Chill. Store covered in refrigerator.

Butterscotch Pudding
"This recipe is good as pudding or as pie filling!"

INGREDIENTS
1 cup dark brown sugar
3/8 cup cornstarch
1/2 teaspoon salt
2 eggs, beaten
2 cups milk
1 teaspoon vanilla extract
1/4 cup butter

DIRECTIONS
In a 1 quart saucepan, stir together sugar, cornstarch and salt. Place over medium-low heat and stir in eggs and milk. Cook, stirring, until mixture thickens enough to coat the back of a metal spoon. Stir in vanilla and butter. Let cool briefly and serve warm, or chill in refrigerator until serving.

Chocolate Pizza

Description:
A rich chocolatey pizza-like confection.

Ingredients:
1 (12 oz.) bag chocolate chops
1 pound white almond bark or vanilla chips
2 c. mini-marhmallows
1 c. crisp rice cereal
1 c. peanuts
1 (6 oz.) jar red maraschino cherries, drained & cut in half
3 T. green mararschino cherries, drained & quartered
1/3 c. flaked coconut
1 tsp. oil

Directions:
Melt chocolate chips with 14 oz. almond bark or vanilla chips in large saucepan over low heat, stirring until smooth; remove from heat. Stir in marshmallows, cereal and peanuts. Pour onto greased 12-inch pizza pan. Top with cherries, sprinkle with coconut. Melt remaining 2 oz. almond bark with oil over low heat, stirring until smooth; drizzle over coconut. Chill until firm; store at room temperature.

Prep time: 15 minutes plus chilling. For smaller pizzas, shape mixture into four 6-inch rounds or twelve 4-inch rounds on wax paper-lined cookie sheets.

Log onto recipelink.com and type in "Jim's Applesauce Cake." It has raisins and nuts, cinnamon, nutmeg, allspice, etc.
It's made in a bundt pan and requires no icing.
I guarantee you, your family will ask for it over, and over.

Try my recipe:

fruit cake

WHAT YOU NEED:
1 box chopped dates
1 lb. candied pineapple
6 c. chopped pecans
1 lb. candied cherries
1 lb. coconut,fine shredded or other
2 cans milk

WHAT TO DO:
Mix all fruits together.
And then then add milk.
Cook at 200 degrees for 2 hours.
