Dijon Cheesesteak Sandwiches
Yield: 4 Servings
Ingredients
1/2 lb velveeta cheese; cubed
1/4 c milk
1 tb dijon mustard
1/4 c green onion; sliced
2 tb margarine
1 lb thin roast beef slices
6 french bread rolls (8);
-split
Instructions
Combine Velveeta cheese, milk and mustard in saucepan; stir over low heat
until smooth. Saute onions in margarine. Add meat, mix lightly until
thoroughly heated. Fill rolls with meat mixture - top with sauce. Makes 6
sandwiches.

The key to a good cheesesteak is good bread. Ideally, you should use Amoroso's rolls, but if you don't have access to those, some form of good, chewy, yet soft Italian bread should do. The meat should be pretty thin and tender. Whether you season it or not is a personal choice...some people add a touch of garlic to the steak. The choice of cheese you use is also a personal choice....generally, provolone or American cheese is used. Onions are, in my opinion, a must, but if you don't like onions, obviously leave them off. Optionally, you can add peppers and mushrooms, but these aren't the traditional ingredients. Sauce is optional, too, but is often added. Usually adding a mild tomato sauce sparingly adds a bit to the sandwich. Voila.
