Extra virgin olive oil is from the second pressing off the olives.Extra Extra virgin olive oil is from the first pressing and is SSOOOOOOOO expensive.Check out the price next time you are in the supermarket.$$$$$$$$$

Extra virgin olive oil is from the first pressing of the olives. Subsequent pressings will still produce olive oils, bur of a lesser quality. In addition, towards the end of the pressing process, the extraction process can be chemically enhanced. There is no need for such enhancement with the first pressing.
