what do guys do when the're really nervous around the girl they like?

Every guy reacts different depending if they are shy, confident or etc......Most will seem to say the silliest things, make jokes, fumble on their words, get sweaty palms, show off, mumble, can't be still or stutter.

Some guys might be really quiet and other guys may try too hard and act foolish.

well... for me, I just tend to stay really quiet, and if she looks at me, I just try to say something but can't. I'm a shy type of guy so it should be obvious from there.
