Hi:

The best way I like eggs I don't know if there is a description. There a little like over easy, but I like the egg a little crisped, so a better description is probably over hard. I use a well seasoned cast iron frying pan, and make it hot. I add about 1 teaspoon real butter - the pan should be hot enough so that the butter sizzles when it's added. The egg should be added all at once, and once added, a few sprinkles of salt should be added to the top of the yolk and the egg should make a pleasant sizzling. It's absolutely the best when the edges of the white become a little crisped. When it looks like whites are almost set, I gently flip the egg over taking care not to break the yolk. I fry the other side until the yolk is nicely thickened when it's cut into. I serve these eggs with toast, so that the yolk can be mopped up with the toast. The butter and the salt usually season the egg well. Yum!

i use eggs that have the omega-3 oils in them because they are the most healthy ones available, i fry them on medium heat with a yogurt-based margarine, not so fast that the bottom turns brown/crusty, about the time the eggs appear done on that one side, move the whites to expose some of the pan, pour in about an ounce of water, put a lid on immediately, and the top of the eggs will be cooked within a minute or so, remove the pan from heat, remove the eggs from the pan and water, set them on some nice toasted, whole grain bread, and have a great breakfast!

hard with this sauce:
tablespoons butter
1 tablespoon finely minced onion
1 teaspoon curry powder (or to taste)
1/2 teaspoon salt
1 tablespoon all-purpose flour
1/2 cup warm beef or chicken broth
1 cup warm milk (half-and-half is best)
6 hard-boiled eggs
Squeeze of fresh lemon juice
Hot rice or toast
PREPARATION:
Melt the butter in a medium nonreactive skillet, add the onion and saute over low heat until the onion is clear. Stir in the curry powder, salt, and flour and cook for 1 to 2 minutes. Off the heat, gradually stir in the broth and milk, stirring until smooth. Return to the heat and bring to a boil, lower heat to a simmer and cook about 10 minutes. The sauce should be slightly thickened and smooth. Taste for seasoning and adjust.

I like omelets with a lot of differnt veggies and seasonings. Tomatoes, mushrooms, onions, green bell peppers, black olives, garlic, sharp cheddar cheese, oregano, basil, garlic, parsley, and every once and a while I like a little bit of ham in there too.

scrambled, with a little garlic powder, and served with a flour tortilla, and a little salsa. mmmmmmmmmmmm so good can add bacon or sausage , green peppers , onions, black olives etc. to taste , personally i like the simple egg, garlic and salsa , or even heck with the salsa and tortilla just egg and garlic, mmmmm

Scrambled, salt and pepper. If I'm really splurging, I fry them in bacon grease. Sometimes I like a little horseradish with them.

Hard boiled, then mashed with a little bit of butter, salt and pepper. Alternately, over easy and served with strips of buttered toast for dipping :)
