I've had Merino and Corsican and they tasted the same. My Merino was a curl and a half and I have no idea how old but was pretty tough. Made great jerky though. Just cook it slow in a crock-pot and it will be fine.

Just be sure the animal is dressed properly to keep the meat tasting good. The oil from the wool will taint the meat I have been told. I have butchered plenty of old male animals and have never had a bad taste problem, but I have not harvested many old rams, so be careful and good luck.

OK, I'm sorry.
All the rams and goats I've tried tasted a lot like venison to me.
This may be because of the vegatation they had fed on, or the marinades that were used, I'm not too certain!
ALL were pretty tasty in my book.

( Soy Sauce, Terriaki Sauce, Montreal Steak seasoning, Beer. )
(Soak in a zip-loc for 1 to 24 hrs. grill with a pat of butter)

Really you will not be able to tell the difference. No adult male sheep is really going to be very good meat. It will be tough and stringy with a very strong odor when cooked.
If you want really great tasting meat, then go buy some Black Angus Rib Eye steaks. They are much cheaper and are so much better to eat.
If your father kills a trophy ram, give the meat to some one you really do not like that much.
