You must have it insured the minute you want to drive it home...
You could be in an accident on the way home and having no insurance is just dumb...

No time it needs insurance as soon as you become the owner if it is on a public road. Your previous cars insurance can ofter be be extended to cover a second car for a month or two but must be done and you must have the certificate before you become theowner if it is on a pubic road.
Not only is there no period of grace you could have to pay every penny you own if you kill someone while uninsured. Bloke reversed over a 4 year old at about 2 mph and killed him near here a few years ago

Once you are approved for a loan to buy a car you should call your insurance company and get it in force before you take the car.You may even decide the car in question cost too much to insure therefore you would need to pick out another car

If you don't currently have car insurance, then you need to insure it before you leave the dealership. If you currently have car insurance, they you usually have 3 days to notify the company that you've changed vehicles. The number of days varies by company, but 3 is pretty standard. If you have a car on the policy with full coverage, then your vehicle will have full coverage. If you only have a liability only vehicle on your policy, then the new vehicle will only have liability until you notify the insurance company.

It should be insured before you drive it off the lot. The law prohibits you from driving any vehicle without insurance, regardless of when you bought it. Some insurance companies will automatically cover a new vehcile within 30 days of the purchase (provided you have a full coverage policy in place on your previous vehicle) however some don't.

When I bought mine brand new from the dealer I had a cover note with it which covered me for 7 days, so I had 7 days to insure it.
EDIT:
Why I have got a thumbs down it was true Ford gave me a note and said I have seven days free insurance with Ford Insure in which time I had to insure it myself, so I was covererd when I drove it home, I couldn't insure it before I picked it up cause I didn't know the reg number as like I said it was brand new - 0 milliage.

Actually you don't have to have ANY insurance on a car you bought. Unless of course, you plan to either drive it, or park it on any public road, then it's required. But you could buy a car, have it towed to private property and stored inside a locked building and never put a penny of insurance on it.

The car MUST be insured before it goes out on the road. Also even off road the car could go on fire and if uninsured you lose everything.
Ignore sammygirls advice, once you've bought the car its your responsibility to insure it.

If you can get the driver to deliver the car to your house and it is parked off road then you don't need to insure it until you need to drive it. However if it is nicked from your drive you will not get any money.
