Here's our recipe:

Saute (1) can drained light red kidney beans, chopped garlic and onion to taste in a little oil till the onions are transparent. We use an electric skillet. While that's cooking, warm 8 large tortillas in the microwave on a plate under a paper towel, or in the oven wrapped in foil. Spread some bean mixture in each tortilla, top each one with some salsa or taco sauce, fold in the ends and replace in the skillet with the edges down. Top with 8oz. shredded sharp cheddar, Sargento's Chef Style works well. When the cheese is melted, serve topped with sour cream or for a lower fat version, you can also use plain yogurt.
