This is the recipe for vanilla butter cream, but if you beat 8 ounces of unsweetened chocolate(cooled completely) into the frosting when you are finished.........it will be the best chocolate butter cream frosting you have ever had!!!

1 3/4 cup sugar
4 lrg egg whites
1/2 tsp cream of tartar
4 sticks (1lb) unsalted butter, softened,cut into 1tbsp pieces
1 tsp vanilla extract
1/2 tsp salt

*combine sugar & 1/2 cup water in a saucepan, (without stirring)bring to a boil. Boil until syrup reaches 235f on candy thermometer.(soft ball stage)

*meanwhile beat eggwhites in large bowl on medium till foamy. add cream of tartar beat to stiff peaks.

*while mixer is running slowly add hot syrup in steady stream to eggwhites. beat until cooled(about 20 min.).

*add butter one piece at a time. beat till thick, glossy and smooth. beat in extract and salt...... now you can add that 8 ounces of melted unsweetened chocolate(completely cooled)

This is a Southern Recipe for Chocolate Buttercream Frosting.

INGREDIENTS:
2 1/2 cups confectioners' sugar
3 tablespoons cocoa
1/4 cup butter
2 tablespoons heavy cream
vanilla
PREPARATION:
In a mixing bowl, cream confectioners' sugar, cocoa, and butter. Beat in heavy cream and vanilla. Add small amounts hot water or hot black coffee until desired spreading consistency is reached.

Here's an easy one from cooks.com:

CHOCOLATE BUTTERCREAM FROSTING
1/2 c. shortening
1/2 c. butter
1 tsp. vanilla
4 c. sifted powdered sugar
3/4 c. sifted cocoa
3-4 tbsp. milk
3 tbsp. light corn syrup

Cream shortening, butter, and vanilla together until light and fluffy. Gradually beat in sugar and cocoa on medium speed, scraping down bowl often. Add milk and corn syrup until light and fluffy.

this stuff is pretty good:

1/2 cup butter
2/3 cup cocoa
4-1/2 cups powdered sugar
1/3-1/2 cup half and half
1 tsp. vanilla extract
pinch salt
