No! Olive oil has a unique flavor and is not meant for baking. You'd be better off using melted butter.

Oh... That would be such a gourmet treat!!! Extra virgin, I assume? Yes, you may, but it is not advised... It does have a strong flavor and will not be as "fluffy" as it usually is. You could use simple non-extra virgin olive oil. In any case, it may be a bit denser and not the flavor you may have been looking for (which has a slight olive overtone versus the "clean" taste of vegetable oil). But be a chef, with an open heart and open stomach, and try it out yourself! I've tried and it's pretty nice.

I use extra virgin olive oil in everthing!!!! Including things that require baking and high temperatures and I have never had a problem and I consider myself a pretty good cook. ~Not sure of all the hype around not using olive oil~

olive oil has such a distinctive taste it would be a mistake to use in cake baking, oils like cannola, corn are bland so will be good to use without changing the flavour.

I think that it would work just fine but olive oil has such a distinctive flavor that I don't think I'd do it. I would use a neutral flavored oil like peanut or canola.
