Depending on where you are wanting to go with the picture. I believe black and white photos are the best when you want to get reviews form people observing your works. Black and white leaves the mind to wonder and create it's own perspective of the picture. Also, I love photoshops black and white and then color accent the focal point. It's a great way to get rid of all the distractions the other colors in the photo might create to the eye.

Color is a beautiful way to capture certain types of works. However it tends to make the eye draw towards flaws in the subjects rather than focusing on the simplicity of the photo.

Sepia...oh sepia. where to begin. In my opinion sepia is really only used when you want to capture a photo and make it appear antique, or older. It's like an in between of color and black and white. It's not too busy for the eye, but it's still distracting. It just doesn't appear to have as big an impact on the person reviewing the photo. But once again it depends on what pictures you are taking. Is it for an antique look? What are you trying to portray to the observor?? Hope this helps.

I like the ones where the people in the background are black and white and the person of interest is in color, always cool.

I am more of a color guy, been working at a newspaper 10 years now so Black and white too bland for me

it truly is maximum probably a photoshop.the picture is honestly taken in colour and then yet another replica is made and switched over to black and white. The photopher will then merge both copies and make aspects of the colour image seem over the B&W one so evidently to be partly colored. so a techniques as i comprehend, there are not any cameras that may do this. They probable meant that some B&W photos have a colour forged or tone, often referred to as sepia, to grant it a previous college, yellowish colour ordinary, yet no longer in a particular portion of the picture. And there are honestly many digital camera that do this.

Black and white captures the essence of the composition and can also be quite effective at stirring emotion. Sepia is really just a variation on this theme. Color photos are more vibrant and lively and they can be eye catching and fun to look at. I think each has a purpose and a place.

of people...hm-m-m-m...it really depends on what the people are doing, and what i am trying to relate in the shot...it is so easy these days to look at a picture in all three modes instantly on the camera, and then take it home and REALLY play with it in photoshop or i-photo...there is a picture of me and my lovely wife in sepia that i really like, yet i did a photo of a young girl playing violin a few years ago, and it looks good in the soft and muted colours i did it in originally (the only colours that read on the film was the greens and blues outside the window---she is framed and silhouetted in the window, it is almost a black and white...but softer, yet not sepia)
and there is a picture of my wife cooking with grandaughter #1 (she's 15), in the kitchen...they look to be discussing some ingredient...it is colour and it wouldn't be good in anything else.
so it depends on what the people are doing and what the photographer is attempting to convey, as to whether we go with colour, sepia or black and white.

for people, personally I think black and white is perfect as it catches all the different tones in their body/skin/face etc. Also has that kinda classic look really :D

Kids photography however I think can work in either B&W or colour, depending on what the child is doing.
