I know fried wontons in many chinese restaurants come with no filling and their is no reason if your using it for soup that you would not be able to either ...whichever way you like it-it wont have the same taste

Do you plan to use them like soft noodles or dumplings? That would probably be OK, you would just need to make them somehow stick together in a dumpling shape, or cut them into strips like noodles. I don't think they would take very long to cook in hot broth. But wouldn't it taste better just to use egg noodles?

If you mean to use the won ton wrappers (skins), why not. You can also slice the skins and make little noodle strips. Are you making chicken noodle type soup?
