Shrimp with cocktail sauce!

Dang I have so many...but I will share a couple with you, they are old family recipes.

City Chicken

1 pound cubed pork
1 pound cubed veal
2 cups or more seasoned bread crumbs
2 eggs
1 cup milk, or more
salt and pepper
2 cans mushroom soup plus 2 cans milk
skewers (short ones)
veg oil, keep the bottle handy

Take the skewers and add 4 pieces of meat to each....veal, pork, veal pork. Set aside when they have all been skewered. In a shallow dish beat eggs and salt and pepper. In another shallow dish add the bread crumbs. You want to dip the skewers in the egg wash and drain and then add to the bread crumbs, twice. Heat the oil in a skillet and brown the rolls on all sides. Place in a baking dish. Mix the soup and extra milk and pour over the skewers and bake in a preheated 350 degree oven for 1 hour and then turn the heat to 250 and bake an additional hour. Serve with mashed potatos and use the cream of mushroom soup "gravy" to top potatos.


****I have no idea why it is called city chicken.


Potato Panckaes

5 to 6 big old idaho potatos, grated on a box grater
2 tablespoons flour
1 egg
salt and pepper
crisco, solid

Once the potatos are shredded, add the flour, egg, salt and pepper. Mix well. Heat the oil about 1/2 inch deep and heat it good. Make "pancakes" out of your batter and fry on both sides until golden brown. Serve with sour cream. OH, you will want to drain them on paper towels. And your NOT going to make them right the first time, they are a practiced art.....

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

My version of pot roast, served with mashed potatoes and its own gravy, and fresh green beans.

Mix together (1) can undiluted cream of mushroom soup and (1) envelope dry onion soup mix. Put a 3-4 lb. boneless chuck roast onto a large double sheet of heavy duty foil. Spread with the soup mixture and seal tightly in the foil. Put it on a cookie sheet to catch leaks and bake slowly for 3 hours, at 300-325 degrees. When it's done it will be very tender and should have enough gravy for the mashed potatoes.
