The red center is a pimento. The Black Olives are ripe and the green are not so they add sodium and flavor.

I don't use the juice in any of my recipes. You may use it depending on what you are using them in. Remember the juice makes it soupy.

The red thing is a pimento. And the only reason I use the green olive juice is for a Bloody Mary.
