I've been trying to eat healthier so I've been eating lots of brown rice and mixed veggies(I'm not vegetarian either) but what I'm wondering is if someone could give me a good recipe for a healthy dinner involving brown rice and vegetables or something else that is low glycemic or just lowered in complex carbohydrates..Any info would be greatly appreciated ..Thanks

Try mixing your brown rice with quinoa, wheatberries and beans to get a complete protien if you're avoiding meat. There are great recipes out there for quinoa and wheatberry rice salads. Serve something like that with roasted or grilled veggies and yum!
...or you could make veggie burgers. Below is one of my favorite standard meals.

Roast Cauliflower with Chicken or Fish (or whatever) and Lime Scented Rice

Roast cauliflower is my favorite!

This goes great with a veggie burger, marinated chicken breast or fish. Suggesting you make sure to get some kind of lean protien here. And you can bake that during the last 20 minutes.

Pre-heat oven to 400 F.
Cut 1/2 head cauliflower into large pieces. Toss with 2 Tbsp olive oil and salt and pepper to taste. Place in one layer on a baking sheet. Bake for 20 minutes, turn cauliflower and bake another 10-15 minutes until the edges are brown.

For the rice:
Add the zest of one lime, 1 Tbsp. olive oil and 1 Tbsp. thinly sliced scallions to your cooked brown rice. (This is for 3 cups cooked rice)
Also cook your rice with broth for more flavor.

Hope this helps.

I would suggest that you buy a cookbook. Look at your local health food store.
I'm not trying to be sarcastic, but you could use the recipes that they have for regular rice and substitute brown rice, and substitute the meat for veggies.
You might also want to try soy products. Your local health food store should have great, tasty soy meat alternatives.

Stir Fry, put some canola oil in the bottom of the skillet and put what ever veggies you like in it. Cook your rice in a seperate pan, when done put on veggies in skillet and put on low and mix altogether.

You aren't eating healthy if you are downplaying complex carbs and instead eating simple carbs. The complex carbs are the ones that are healthy for you.

You really should talk to a dietician. S/he can help you understand how all that stuff works and help you create an eating plan that will work for you.

Eat beans and nuts..they are the best source of protein and it seems like you havn't been getting a lot of protein. (Have you been eating any meat?) Chicken and fish are pretty good for protein too, and red meat is ok.
