I have recently seen Gerello roasts advertised. What are they???

SILVERSIDE/TOPSIDE

These big lumps of thigh muscle have very little fat and are often sold as "lean" burger mince or stir-fry strips. Because of the lack of fat, this meat tends to dry out during roasting. Try slow pot-roasting with plenty of vegetables, some bacon and a bouquet garni. Corned silverside devotees love it simmered in water with carrots, cloves and lemon and served with mustard sauce or salsa verde. One of the muscles that make up the silverside is the girello. It is small and evenly round and can be roasted quickly without drying out. Girello is salted and dried to make bresaola.

Gerello is the name to a cut of beef from the hindquarter of a cow, just above the leg cut.
Gerello is often called Silverside which gets its name because of the 'sliverwall', a long fibrous 'skin' which has to be removed, it is too tough to eat.
The Gerello is boned out from the top along with the topside and thick flank.
Gerello is for roasting or it is sliced for minute streak or beef olives. In most parts of the U.S. this cut is known as bottom round, as it comprises the bottom portion of the beef round.
