You can make a Rolled Pasta which is really easy and Delicious. You roll each cooked, noodle up with a Ricotta Filling or a Ground meat Filling..Add a little filling to each noodle at the short end and roll them up, then when each roll is rolled up, the roll is then baked in a baking dish with a Sauce topping, of cream or tomato sauce. Use the same filling like you would Cannoli or Mannicotti. When the Rolls are cooked either serve a roll for person or cut in slices.. Ricotta and Spinach is delicious rolled up,
You can also cook and cut the noodles into small pieces and use the cut pasta in casseroles, such as, macaroni and cheese..

If you want to not eat them and you have young children, they can be used for craft projects. Long pasta can be glued and painted very nicely. I've done it before!
I used lasagne to make an Italian flag for a unit on Italy with my students.

Have you tried different versions of Lasagna? There are white sauces, Vegetarian styles, etc. I have also broken them into bite size pieces and used them in Stroganoff before (they are thicker than the normal egg noodles). Guess you could also break into bite size pieces and make Mac & Cheese in the oven. Basically anywhere you would use regular noodles, just break them up.

You can also break them up and add them to soup or slow cooker recipes.
Maybe cook them, cook some veggies and filling (tuna, turkey, ground beef or veggie crunbles) and fill them (or let your kids fil them) individualy then put a suace over it ... sort of like a cross between a burrito and a canneloni...

I had the same problem!!! So i figured out that if you undercook them a little bit, like for, say, six minutes, so that they arent really soft, but not too hard. Then spread peanut butter and jelly or you can put like, cream cheese and ham, or your favorite sandwich. Then roll them up and eat!! yum yum!!!

Boil them in sugared water and make desserts out of them. I've made a dessert lasagna with sweetened riccotta cheese and fruit.

After cooking, they can be filled & folded, to make "stuffed noodles.
You can use any combo you like---seafood inside baked in an alfredo sauce, taco meat & baked in enchilada sauce, refried beans with canned tomatoes, shredded chicken inside with BBQ sauce poured over...turkey & stuffing leftovers, baked in the gravy...ANYTHING!!!
Be creative with what you have in the fridge, freezer, or pantry.

Stuff and roll them with whatever kind of filling you'd like. You could also make them into strips and put them in soups. Use your imagination there's lots you can do.
