Chicken Salad.....of course!!!

This is really good if you use crockpot for your chicken......Take 3-4 lbs of legs, thighs, etc....generously salt and cook in crockpot on high until meat is very tender......Do not put any water in it....it will make it's own juices and be delicious.
Remove from bone and chop into bite size pieces.
Put chicken in large mixing bowl....Add 1 cup sweet pickle cubes...3 boiled eggs (chopped very fine...I use cabbage grater and shred them).....1 small onion....very finely diced (do not use
processor or electric chopper....it makes it strong).....1 TBLS black pepper, and 1 1/2 cup hellman's mayo......Mix well......Add 1/2 cups slivered almonds and 2 cups seedless black or purple grapes....(washed and cut in half) Fold these ingredients in....if it seems a bit dry...add more mayo....Chill for 2-3 hours. It is great on sandwich with swiss cheese and lettuce.....ENJOY

I love boneless chicken thighs in a tequila lime marinade.
In a ziplock combine 1/4 c tequila, olive oil, salt, pepper, garlic & the juice of two limes. Add boneless chicken thighs and marinate overnight or up to three days.
Broil or bbq.

Amish Chicken Dijonaise

8 chicken thighs, skinned
1/2 cup flour
3 tablespoons vegetable oil
2 teaspoons minced shallots
2 cups sliced small mushrooms
1 cup champagne
2 cups plain yogurt
1/2 cup Dijon mustard
1/2 teaspoon parsley
1/4 teaspoon freshly ground pepper


Place flour in plastic bag and add chicken, shaking to coat lightly. In nonstick frypan, place oil and heat to medium temperature. Add chicken and cook, turning, about 10 minutes or until brown on all sides. Remove chicken from frypan and set aside. Drain all but 1 tablespoon oil from frypan. Add shallots and mushrooms; saute´ 2 minutes. Add champagne, yogurt and mustard. Turn heat to low temperature and simmer until sauce begins to thicken. Add parsley and pepper. Return chicken to frypan, turning to coat with sauce. Simmer about 10 minutes or until fork can be inserted in chicken with ease. Makes 4 servings.

Chicken legs & thighs are great as "tetrazzini" or cacciatore----baked in seasoned tomato sauces, with mushrooms, peppers, & onions.

They are also great smothered in BBQ sauce, or baked in a half & half mixture of soy sauce & water.

Lots of Thai recipes use them, too--google "chicken thigh recipes".
