I have leftover taco meat (ground beef) but dont want tacos again..anyone have any suggestions for dinner? maybe casseroles or something?

Hi. I usually make this recipe by chopping beef into small cubes and starting from scratch, but I guess it would work with leftover taco meat 'cos I use very similar seasoning ...

You want some tinned chick peas (about the same in volume as you have of meat). Check that your meat is well-seasoned - it might need to have a little more cumin and chili than a regular taco recipe. Heat the meat and chickpeas together.

While they're heating - or beforehand - take an iceberb lettuce, shred it fine, and put it in the fridge to chill; also make a really mustardy French dressing.

When you're ready to serve, add the dressing to the lettuce (use one bowl per person) and make a hollow in the middle. Add the meat and chickpea mixture (really hot - temperature-wise) and serve immediately.

This is delicious, although a bit messy - full of contrasts between the hot meat mixture and the chilled lettuce, the crunch of the lettuce and the softness of the chickpeas, the two different kinds of spiciness in the dressings ... give it a try.

I make a layered warm taco dip for an appetizer, but I have seen people make meals out of it.

Layer:
Refried Beans
Taco seasoned meat (I use ground Turkey usually)
DIced Onions
Sliced Black Olives
Top generously with grated cheddar or mix of cheeses

Bake 350 about 20/25 minutes

Top with Salsa
Shredded Lettuce
More shredded cheese
Sour Cream

Serve with Taco Chips

Mexican Casserole

1 pound lean ground beef
1 (15 ounce) can ranch-style beans
1 (14.5 ounce) can peeled and diced tomatoes
1 (10.75 ounce) can condensed cream of mushroom soup
1 (12 ounce) package corn tortillas
4 cups shredded Cheddar cheese
2 tablespoons chili powder
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Brown the ground beef in a large skillet over medium high heat. Add chili powder, beans, tomatoes and soup; mix well and heat thoroughly.
Line a 13x9 inch dish with tortillas. Then make a layer with the meat mixture. Make another row of tortillas, then finish off with rest of meat mixture. Top with grated cheese.
Bake in a preheated oven for 30 minutes.

You could put it in chili or something like that but you could also use it in a pizza or add it to some spaghetti sauce. The flavors blend remarkably well. Another option is to just freeze it. Seasoned, cooked ground beef freezes really well so you would be right on your way to some nacho's or tacos later on in the week when you're hungry for them again.

I purposely make extra taco meat, the leftovers to be the base for chili the next day. Or I sometimes freeze it and use it later for more tacos, taco salad, or taco casserole.

Taco Casserole

Prep Time: 25 Minutes
Cook Time: 35 Minutes
Ready In: 1 Hour
Yields: 10 servings

INGREDIENTS:
1 pound lean ground beef
8 ounces macaroni
1/2 cup chopped onion
1 (10.75 ounce) can condensed tomato soup
1 (14.5 ounce) can diced tomatoes
1 (1.25 ounce) package taco seasoning mix
2 ounces shredded Cheddar cheese
2 ounces shredded Monterey Jack cheese
1 cup crushed tortilla chips
1/2 cup sour cream (optional)
1/4 cup chopped green onions

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cook pasta in a large pot of boiling water until al dente. Drain.
3. In a large skillet, cook and stir ground beef and chopped onion over medium heat until brown. Mix in tomato soup, diced tomatoes, and taco seasoning mix. Stir in pasta.
4. Spoon beef mixture into a 9x13 inch baking dish. Sprinkle crumbled taco chips and grated cheese on top.
5. Bake for 30 to 35 minutes, until the cheese is melted. Serve with chopped green onions and sour cream, if desired.

Thoroughly cook some red kidney beans, throw away the water, rinse, drain and add to your seasoned meat and you've got chili con carne. Or use the seasoned meat as the filling for Mexican corn meal pie. Add mixed vegetables (optional). For the topping mix water, coarsely-ground corn meal, baking powder, pepper, salt and finely chopped chives. It should have the consistency of mashed potato. Spread on top of the filling then bake in a hot oven until golden brown.

In their early days Taco Bell used to have a sandwich called the "Bell Beefer". It was their seasoned Taco meat on a hamburger bun ALA Sloppy Joe style. It actually is pretty good. Serve w/some chips, salsa & a salad and viola...dinner.

OMG here is what you do make pico digallo PICO DE GALLO

8-10 Roma tomatoes (seeded)
1/2-1 red onion (to taste)
1 jalapeno pepper (or more to taste)
2 medium cloves garlic
juice of one lime
1 tablespoon olive oil
4 tablespoons chopped fresh cilantro
1 teaspoon coarse salt
1/2 teaspoon fresh ground black pepper

Seed and dice tomatoes. Chop onion, jalapeno and garlic to a fine consistency. To these ingredients, add the fresh cilantro, salt, pepper, olive oil and lime. Mix well.

Cover and refrigerate for at least 3 hours. Best if served the next day.

Next take some lettuce and tortilla chips crunch em up mix it with pico de gallo and meat then eat enjoy!
