I do not believe that the universe is only a couple thousand years old, but an answer based on that would not be interesting. To answer this question in an interesting way, I have to let aside what my common sense tell me, and assume that the current view of the evolutionists is wrong.
Even in such a context, my answer is simply that they would not believe it -- they will reject it. There is no such thing as an "undeniable proof". One can always easily reject a proof. One does not even have to say that the proof is wrong, but simply that he cannot understand it. If every step in the proof is very easy, but the basic facts are difficult to check, one might then argue that he does not have the time, the finance, the necessary skills, or simply the motivation to verify the facts. The history of science is full of examples where solid evidences were rejected.
So, I think one would be naive to believe that scientists will ever feel forced to accept something that is completely against their current view of the world. They will reject it very easily, they will even laugh about it, even if there is a so called "undeniable proof".
The big mistake will be to take the above as an evidence against the evolutionist view. The above only says that even if they were wrong to do so, they will reject it. If they are not wrong, which I believe is the case, they would certainly reject it and laugh about it.

If scientists were given undeniable proof that the universe was only a couple thousand years old, they would have no choice but to accept it. But such proof has never been produced. In fact, there is much evidence that the universe is much older than that.

Start believing the universe is only several thousand years old.
Atheists are only interested in truth, not religious opinon.
So far all evidence points to an old universe. If proof is produced which unarguable proves a young universe i don't know of any atheist that would deny it.
I have a question for you.
Why do we see light coming from galaxies billions of light years away if the universe is only a few thousnd years old?

Scientists would be 1.) very surprised, and 2.) thrilled. It would usher in a new era of intensive research, because obviously the present model of the universe would then be incorrect and a new one would be needed. But you are mistaken if you think it would mean that God's existence would then be scientifically proven, or that the Bible would then be used as a scientific reference. Science deals with the "how"; a miracle is not a "how".
Even if God's existence was somehow proven, the scientific response to "God created the universe" would still be "but how?".

Look, I believe in God and I love science. The way I reconcile religion and science is simple:
Man wrote the bible therefore there is no need to take it perfectly literal.
God is responsible for EVERYTHING in the universe and man can spend the rest of time discovering it all.
The Christian Church is single handedly responsible for the dark ages. They needed to keep knowledge (and therefore power) in their control. Before that, at the council of Nicea a handful of men decided what writing to put into the New Testament conveniently excluding any writings that promoted that God and Jesus could/should be found by oneself within oneself and instead spread word that one could only find God by sacrificing to the church and ONLY the church. What happened up until about 300 years ago if you resisted the Church? YOU GOT MURDERED. God only knows what was edited from the Old testament.
To me you can love God and science and take organized religon with a grain of salt

Believe, obviously. Evidence is why we don't believe that.
Use three independent dating methods (uranium-lead is best, there are others, I'm sure you know), have scientists date the oldest rocks on Earth, have them blind-analysed at three different labs, and if they all come back with a date of about 6,000 years, we're in business. Good luck.
I won't even start on the light from stars 13bn light years away that we can see even though it's only had 6,000 years to get here...

We would have no choice but to accept it, (the beauty of science is that we accept reality is not based on what we want) and the person who found the evidence would win many awards and probably become the most famous scientist of the 21st century.
I wouldn't put money on it ever happening though.

Won't happen. But if you could, science would change to match the evidence.
You couldn't do it with one find. There is so much evidence that it is very old, that you have a lot to overcome. Radiological dating, the time light would take to traverse the huge distances, background radiation from the big-bang, fossils, etc, etc. You would have to either come up with a way to match it, or explain it ALL.

Well first we already have evidence that contradicts that.
But assuming that this new evidence could explain why all the old evidence is bad, than yes scientists would start to shift to the side of a younger universe.
Scientists are not anti-god, they are pro-evidence.
