Years ago I went on a hunt to find the “perfect chocolate chip cookie” recipe. I tried dozens of different types. I happened to stumble across this recipe while reading one of my home and cooking magazines. Eureka! This is the perfect chocolate chip cookie, delicate, buttery, chewy, just plain delicious. So here it is:

1 1/4 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup of butter or margarine (1 stick) softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract (the good stuff)
1 cup semisweet chocolate chips (mini chips work great too!)
1/2 cup walnuts, lightly toasted and chopped (optional)

Preheat oven to 375 degrees F. On waxed paper, combine flour, baking soda, and salt.

In large bowl, mix butter with sugars on medium speed until creamy. Add egg and vanilla. Reduce speed to low; incorporate flour mixture, until just mixed. Fold in chocolate chips and walnuts.

Drop dough by heaping tablespoon, 2 inches apart, on large cookie sheets. Bake 10 to 12 minutes until golden around edges. Transfer cookies to wire racks and cool.

Super Simple Chocolate Chip Cookies - a family recipe

Yields: 3-4 dozen

1 box Betty Crocker Super Moist cake mix
1 egg
1/4 C veg oil
1/4 C water (only add a smidge more if too dry after mixing)
half of a 12oz bag of Nestle chips (I like the swirled ones the best)

Mix all ingredients together; drop by teaspoonfulls onto UNgreased cookie sheet; bake at 350 degrees for 12-15 minutes; let stand on cookie sheet for 3 minutes before removing to cooling racks.

My oven works best at 13 mins. Best to go 13 and insert a toothpick; if it comes out clean, they're done. DO NOT overbake them or they turn out like hockey pucks! They will look underdone, only because it's a cake mix, but after the 3 minutes of standing, they set up right. They will be chewy and delicious once cooled completely.

Mix and match your cake mix & chips: chocolate cake/raspberry chips; strawberry cake/choc chips; white cake/mint swirls; vanilla cake/butterscotch chips ... the possibilities are endless! Enjoy!
