She said she wanted to start over and take things slow. I set a date for her for Saturday but she said since I was in the neighborhood looking at places to live tonight, she wouldn't mind if I stopped by and play with the dogs while she is at dinner, and she would see me when she gets back.
Should I even make my self available to do this, or would she want me more if I couldn't make it tonight and made her wait till Saturday? Do you give them what they want when they want it or do you need to take control of the situation?

My thoughts on the matter would be to stop by after she leaves and play witht the dogs (if that is something you want to do).

Leave before she gets back, but leave a note behind, thanking her for the opportunity to visit the dogs. Make sure you put something in the note about the fact that you are very much looking forward to saturday, and will see her then.

Just a small piece of advice for you during this time, take this time to reflect on your relationship and what may have caused this separation (from her perspective, and your own). Look at what you may be able to do to better meet her needs, this could be emotional, physical, financial or a combination of all of the above.

If she sees you taking an active approach to working on yourself, her heart will soften much faster.

You lived together for 2 years...she booted you out and uses the excuse "Lets start over and take it slow"?

Heh,heh...buddy...whether you know it or not you're on your way out. Think there may be a reason as to why you get to babysit Fido and Rover while she's out "having dinner"? Hmmmmmmm?
Forget this "Will she want me more if.." routine. No matter what you do the door is closing. Of this I have no doubt. This can be equated to people who say "I need space" or "I need to have time to think". This translates to "I am interested in a relationship...but it isn't with you anymore".
I'm not wrong on this...mark my words. So...take it slow if you think it's wise. Keep your eyes peeled though. You'll see the signs. If I were you..I'd brace myself for what you're about to discover. better you prepare now than be shocked and in despair when the other shoe drops.
