In order to get that tasty, white bread onto the shelves of your favorite grocery store without spoilage, wheat must undergo about twenty unhealthy steps to become white flour. (Polished white rice undergoes a similar process.) The healthy, whole-wheat grain must be heated to the point of oxidation or burning during the milling process. Several chemicals are used to bleach the wheat, such as chlorine dioxide, acetone peroxide, and benzoyl peroxide. These chemicals produce toxic byproducts in the human system. In other words, the whiter the bread, the sooner you're dead. (Russell, Rex. What the Bible Says About Healthy Living. Ventura, California: Regal Books, 1996. 118.)

Approximately 90 percent of the original nutrients and fiber contained in the grain is stripped away during this process. When this began to cause health problems in Americans, the government mandated that four nutrients be added back into the highly-processed, white flour. It was then labeled "enriched." Unfortunately, the minerals used to enrich the bread are inorganic and cannot be absorbed into the body. They may even be toxic in some forms. When refined sugar is added to this mix, the bread becomes even more toxic.

it's made up of simple carbs instead of complex carbs. Simple carbs are broken down faster and converted to sugar faster, while copmlex carbs give you more energy that your body burns off better. it's better to eat whole wheat bread if you want healthier carbs.

White bread has little or no fiber, therefore it does not fill you up for long, and because it is a processed carbohydrate, it will convert to sugar quickly in your body if not burned immediately. It contributes to higher blood sugar and excess sugar converts to fat. High blood sugar levels can cause numerous health problems over time.
