I use mineral oil on all of my wood food prep areas. It repels water and discourages bacteria growth.

I get the dough that comes in a can (like pilsbury) then roll it out and rub it with olive oil (not too much, just enough to moisten it) then I sprinkle with basil and oregano and puncha few small holes in it with a fork (this will keep the crust from bubbling up) bake as directed (this usually involves baking it a little bit then pulling it out and adding your sauce and toppings, then continuing to bake. for the sauce I use a can of tomato sauce (like 10oz. or so) and a half a small can of tomato paste. Mix those up good with some spices. Then put that on, sprinkle a bit of cheese on (mozzarella usually) then add your other toppings top it off with more cheese and bake until done. great! now I'm all hungry for pizza....haha

mineral oil and this should be used on wood cutting boards also, this keeps the wood from drying out and you do not have to do it every use, just when you observe a dry look starting.
lay on wax paper and wipe oil on with paper towel, let set out over night and wipe off excess for smooth look.
cutting board done the same but wait some time before doing the back side, give the front side time to absorb.
other oils will turn rancid and do not use linseed oil ever if this is to be used with foods

nothing . wood lives on after its cut down. a cutting board made of wood with out any finish on it is much better at killing the germs and staying clean and safe then any other this is a fact
so your wooden rolling pin does not need any finish on it at all period .

I would not put anything on it except maybe olive oil. Rub it in well and depending on the wood, you should get an excellent sheen. The oil will preservre the wood and protect it from any water/moisture when cleaning. Occasionally repeat as you use it.

I just wash mine and let it air dry. I don't use any kind of oil. I found a thread on a cooking site where they said the same thing:
