A flavorful pineapple buttercream frosting, delicious on a yellow cake or pineapple chiffon cake.
INGREDIENTS:
1/2 cup butter
4 cups sifted confectioners' sugar
6 tablespoons well drained crushed pineapple
1 to 2 tablespoons pineapple juice
PREPARATION:
Cream butter; gradually beat in sugar, creaming well. Stir in crushed pineapple and just enough pineapple juice to make it spreadable. Beat to blend thoroughly

PINEAPPLE CHERRY FROSTING:

Blend 4 cups sifted confectioners' sugar with 1/4 cup Snowdrift and 1/4 cup butter. Stir in 2 1/2 tablespoons maraschino cherry juice and 2 1/2 tablespoons canned pineapple juice. Mix until smooth. Frost; decorate with cherries.

This creamy frosting is wonderfully good on yellow or white cakes. This recipe makes enough to frost one 9x13 inch cake. Enjoy

Cream Cheese Pineapple Frosting

INGREDIENTS
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container frozen whipped topping, thawed
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1 (16 ounce) can pineapple pie filling
1/2 cup flaked coconut
1/2 cup chopped walnuts

DIRECTIONS
In a large bowl, mix softened cream cheese with whipped topping, confectioners sugar and vanilla. Mix well and frost cake with this mixture. Spread pineapple pie filling over frosting, sprinkle with coconut and chopped nuts. Enjoy!

Pineapple Frosting

1/4 cup shortening
2 tablespoons butter, softened
1 teaspoon grated lemon peel
1/4 teaspoon salt
6 cups confectioners' sugar
1/2 cup unsweetened pineapple juice
2 teaspoons half-and-half cream
chopped walnuts (optional)

For frosting, in large mixing bowl, beat shortening, butter, lemon peel, and salt until fluffy.
Add confectioner's sugar alternately with pineapple juice.
Beat in the cream.
Spread between layers and over top and sides of cake.
Sprinkle with walnuts if desired.

This one came from Recipezaar.

1 (3 1/2 ounce) package instant vanilla pudding
1 cup milk
8 ounces cream cheese, thinned slightly w/additional milk
1 (8 ounce) container non-dairy whipped topping
1 (12 ounce) can chopped pineapples, drained (to taste)


Prepare pudding according to box directions, except use only the 1 c. milk.
Beat together pudding and thinned cream cheese.
Fold in whipped topping.
Frost cake (yellow is a good choice)-- frosts equivalent of a boxed cake mix.
Sprinkle with pineapple.
Can also sprinkle with coconut and chopped nuts if desired.
Refrigerate.
