We're having whole-wheat spaghetti with home made fresh pesto and sautéed shrimp. With a salad of sliced tomatoes and baby fresh mozzarella on the side.
For dessert angelfood cake with peaches, vanilla ice cream, and a sprinkle of cinnamon.

I'm going to bake chicken breasts that have been marinated in Italian dressing, and serve it with Au Gratin Potatoes and LeSueur Early Peas. If my husband wants a salad, then I will add that to the menu. Top it off with a tall glass of Sweet Tea. Yummm!

I am having left over roast beef from yesterday. In order to make it presentable I will shred it, Warm cook tortillas in the toaster oven til mildly crisp. Then spread the beef on top with a healthy layer of Cheddar on top. Then back into the toaster over to melt. As soon as you bring it back out fold it in half and slice it like a Quesadilla.

Well, right now, I'm seriously considering the "Meals on Wheels" thingie the receptionist left for me. Ribs, frijoles, cornbread, a banana, and some other stuff in a bag (I haven't looked in it yet). Supposed to be for some homeless guy, but she was too lazy to pack it out with her when she left, so it's all mine.
