I had this dish in NY around the new year. It had peanuts and red bell peppers but I can't find a recipe anywhere.

Grilled Firecracker Chicken

1/3 cup tomato sauce
1/4 cup apricot jam
2 tablespoons lime juice
3 garlic cloves, chopped
1/2 jalapeno pepper, chopped (take out seeds if you don't like it H.O.T.)
4 (5 ounce) chicken breasts
2 tomatoes, seeded and chopped
2 tablespoons cilantro, chopped
1 avocado, diced
1 tablespoon olive oil
1 tablespoon lime juice
salt
pepper


Fire up that grill!
Puree the first 5 ingredients. Place about 1/2 of this in a zipper bag with the chicken breasts and marinate for 30 minutes.
Combine the next 5 ingredients and season. Keep cool and covered until serving.
When Chicken is marinated, remove from the bag, season with salt and pepper and grill for about 6 minutes per side( you should know your grill). Use the remaining-fresh marinade to baste the chicken as it grills or as sauce when it is done. It will get nice and dark (I love the charred sugar smell from the jelly).
Serve with the dressed avocado and tomatoes.

I found this online I have never made it but it sounds Yummy! I am sure you can substitute the chile peppers with red and add the peanuts. At least you would have the basic recipe. Hope this helps

Firecracker Chicken

1 pkg. 2 Alarm Chili Mix
2 doz. dried red Chile peppers (or hotter if you can handle it.)
1/2 of 12 oz. can Budweiser
1 tsp. sugar
Finely chopped garlic
Olive oil
Covered grill or kitchen oven
Beer can holder recommended

Remove the Masa/Flour from the packets of spices. Mix sugar and all other spice packets together. Wash chicken thoroughly and pat dry.
Coat the chicken lightly with oil. Rub on the spice all over, and put some inside the chicken also. Add a tablespoon of spice and a tablespoon of garlic to the can.

Pre-heat grill to 350°. Put can in holder. Put cavity of chicken down over beer can and press down firmly. Using a small knife, make small slits in breast, thigh, legs, and wings. Insert peppers into slits with stems (fuses) pointed out. It should look like firecrackers.

Put chicken on grill, balancing well. Cook at 350° for 2 hours or until chicken is done. (Use meat thermometer. DON 'T GUESS!)
Temperature must be at least 180° in breast and thigh. IMPORTANT!
When done, remove from grill, cover with foil, and let sit for 15 minutes.

Serve with potato salad, cornbread, and sweet ice tea. Fresh peach ice cream would be a good dessert.
