I'm in school during the day, and she works nights (although not every day) so we just talk on the phone. We've been out once (was my first date ever, i'm 20). She has a baby so we can't really do stuff any time although her mom does watch him sometimes.

You're both going to need to decide if this is worth making the effort for. If it is, then both of you need to get creative about when and how you can spend time together. Talking on the phone certainly helps, and shows some level of effort. Maybe even offering to meet her during a break at her work would be a start.
