How about Croatia or Slovenia?
Ryanair, Wizzair and Easyjet all fly there, and all have sales starting from about 1p.
There's snow in the north of Slovenia, if you're in to that, or a fabulous wellness centre in Catez that has 1800m2 of covered pools for winter swimming. Ther speak English there too.
You'll get really cheap accomodation in Croatia this time of year and 1000GBP is about 10500kuna (2months salary here)The best weather in Croatia is down south, like Dubrovnik or Hvar, theý're both beautiful places to see.

Well I would recommend drivin to a destination not to far so you have money for food, and accoedation - I don't know where you live or whats around you but a family time together on the road will save you some money
