Seven Layer Dip
"Perk up this classic dish with fresh lime juice and homemade guacamole."
Original recipe yield:
8 cups
INGREDIENTS
1 (16 ounce) can refried beans (traditional variety)
1 (4.5 ounce) can chopped green chiles, undrained
1 tablespoon fresh lime juice, plus
2 tablespoons fresh lime juice for avocado layer
2 teaspoons chili powder
1/4 teaspoon ground cumin
Salt
3 avocados, halved, pitted, flesh spooned out
1 cup sour cream
1/2 cup mayonnaise
1 cup salsa (drain to equal 1 cup if salsa is especially runny)
3/4 cup sliced canned black olives, drained
1 cup grated pepper Jack cheese
1/2 cup thin sliced scallion greens, green part only
DIRECTIONS
Mix beans, chiles, 1 Tb. of lime juice, chili powder, cumin, and a pinch of salt in a small bowl. In a second small bowl, mash avocados with a fork; stir in remaining 2 Tbs. lime juice and 1/2 teaspoon of salt to make guacamole. In a third small bowl, mix sour cream and mayonnaise.
Spread bean mixture, then guacamole, then sour cream mixture, and finally salsa over the bottom of a 9-inch deep-dish pie plate or similar size pan. Sprinkle with olives, then cheese. (Dip can be covered and refrigerated up to 2 days) To serve, sprinkle with green onions.

INGREDIENTS
1 pound dry pinto beans
1/2 pound bacon
4 serrano peppers
DIRECTIONS
Place the beans in a large pot with enough water to cover by 3 to 4 inches, and bring to a boil. Remove from heat, and let sit 1 hour. Drain water. Pour in enough fresh water to cover beans by 3 to 4 inches, and bring to a boil. Reduce heat, cover, and simmer 1 hour.
Place bacon in a skillet, and cook over medium high heat until evenly brown. Crumble bacon, and transfer, along with grease, to the pot with the beans. Continue to cook beans on low heat for 30 minutes.
Place the whole chile peppers into the pot, and continue cooking beans 1 hour, or until tender.
Mexican Cream Cheese Rollups

INGREDIENTS
1 (8 ounce) package cream cheese, softened
1/3 cup mayonnaise
2/3 cup pitted green olives, chopped
1 (2.25 ounce) can black olives, chopped
6 green onions, chopped
8 (10 inch) flour tortillas
1/2 cup salsa
DIRECTIONS
In a medium bowl, mix together cream cheese, mayonnaise, green olives, black olives and green onions.
Spread cream cheese mixture in a thin layer onto each tortilla. Roll up tortillas. Chill about 1 hour, or until the filling is firm.
Slice chilled rollups into 1 inch pieces. Serve with salsa for dipping.
Mexican Pizza

INGREDIENTS
2 (8 ounce) cans refrigerated crescent rolls
1 (8 ounce) package cream cheese, softened
1 cup sour cream
1 pound ground beef
1 (1.25 ounce) package taco seasoning
1 (2.25 ounce) can sliced ripe olives, drained
1 medium tomato, chopped
3/4 cup shredded Cheddar cheese
3/4 cup shredded mozzarella cheese
1 cup shredded lettuce
DIRECTIONS
Unroll crescent roll dough and place in an ungreased 15-in. x 10-in. x 1-in. baking pan. Flatten dough to fit the pan, sealing seams and perforations. Bake at 375 degrees F for 8-10 minutes or until light golden brown; cool. In a small bowl, blend cream cheese and sour cream with a wire whisk; spread over crust. Chill 30 minutes.
Meanwhile, in a skillet, brown beef; drain. Stir in taco seasoning. Add water according to package directions and simmer for 5 minutes, stirring occasionally. Spread over cream cheese layer. Top with olives, tomato, cheeses and lettuce. Cut into serving-size pieces. Serve immediately or refrigerate.

Sweet Corn Tomalito
They serve this at alot of the Mexican food chain restaurants like Chi-Chi's, Don Pablo's, Chevy's... I love it!
6 cups fresh corn kernels
3/4 cup milk
1/4 cup (1/2 stick) butter
2/3 cup sugar
3/4 cup cornmeal
3/4 teaspoon baking powder
3/4 teaspoon salt
1/4 cup milk
Preheat the oven to 250 degrees F. Blend 3 cups of corn kernels and the milk in a blender or food processor until smooth. Whip the butter, and sugar together in the food processor until light and fluffy, about 2 minutes. Add all ingredients, including the puréed corn and the remaining 3 cups whole corn kernels, and mix well. Pour the mixture into a 9 x 13-inch pan. Cover tightly with aluminum foil. Set the pan in a large roasting pan. Pour enough cool water into the roasting pan to reach 3/4 inch up the outside of the 9 x 13-inch pan. Bake for 1-1/2 to 2 hours, or until the corn mixture registers 175 degrees on an instant-read thermometer and the corn mixture is set. Scoop out portions of the pudding and serve hot

Make this soup and serve it in shot glasses as an hors d'oeuvre.
HABANERO-AVOCADO SOUP
2 large ripe avocados, peeled and pitted
1 habanero chile, seeds and stems removed, minced
4 cups chicken stock
1 cup heavy cream
Salt and freshly ground white pepper to taste
1 tablespoon cilantro, finely chopped
6 tortillas, quartered and fried in oil until crisp
Mash the avocados and put them through a sieve. Place them in a heated soup tureen. Heat the habanero and chicken stock with the cream in a saucepan and stir well. Pour the stock into the avocados, stirring to mix, or beat lightly with a whisk. Season to taste with salt and pepper and sprinkle with cilantro.

Chicken Quesadillas(very simple)
Flour tortillas,chicken breast and campbells soup nacho cheese soup
Cook the chicken and cut them in to strips dump the soup in with some water then put those in the tortillas and toast a little in the oven and enjoy

Guacamole and salsa with chips...
Refried beans, jicama salad and some sort of taco/enchilada/chimichanga/burrito/etc. would be good. Churros for dessert! Don't forget the margaritas!

I'd say make beef tacos..buy store bought taco shells, fry up some beef and season the way you like it. chop up some lettuce tomato, onion, and avocado. set everything out and have people make there own tacos with some cholula hot sauce. its the way we do it at home..
