If you're talking about Italian sausage and sausage links, most of that is made from typical cuts like pork shoulder (butt) and pork fat.
Also, different types of sausages use different cuts and bits... depends upon the sausage. The ingredients label usually tells you what's in it.
If you're talking about hot dogs and bologna type stuff, anything goes since that stuff is so finely pulverized, it would be impossible to i.d. what went in there originally.

Funny you ask that! I was just watching "The Simple Life", with Paris Hilton and Nicole Riche, last night and they had to make sausages as their job for the day. According to the ones that they made, it included pork, pork skin, pork liver and pork intestines! Yuuuuuuk! I very rarely eat sausage, but I think I may cut-back even more! Eeekkhh!

most simply, sausage is made of the small and leftover parts, things that would be unpalpatable otherwise.
there can be almost any sort of meat in it, but there doesn't have to be any meat in it either. there are often fillers used, such as corn products, which affect the texture and nutritional value, but not the taste/flavor.

"Everything else" goes into hotdogs, sausages... etc..
I saw a Modern Marvels on meat packing facilities... it truely is whatever is left over after taking the prime cuts.
I like hotdogs and sausages.. but its hard to eat them after watching that!!

Believe me, ALL meat, fat, etc. is put into sausage. Only the bones, hair, nails, hooves, etc. are not used. However these are used to produce gelatin (for jello), glue and other products.
