It depends. 3 main types are natural, collagen, and synthetic. The natural casings are usually pig intestine, but also could be cow or sheep depending on the diameter of the sausage.

Collagen are thinner and more tender than natural casings. They now come in all different sizes and thicknesses. They are used a lot in the manufacturing of hot dogs.

Synthetic casings are typically used for summer sausage, salami, and bologna. They tend to be stronger than natural casings and many are fibrous like the casing around pepperoni.

Some of them are still hog intestines. The casings I have are artificial and not meant to be eaten. I think they're made from cellulose.

I suppose it depends on where you're from. In Spain they're definitely made from tripe.
