Thomas Merton is the easiest for most people to understand. He wrote many books. I recommend "No Man Is an Island". Currently I am reading one of the book that was not published until some time after his death. That is "The Inner Experience" Notes on Contemplation. That is NOT a book to start with if you know nothing about meditation and contemplation.

I also love the poetry of St. John of the Cross. I like reading mystical theology, but even for those who may never want to be serious students of St. John, you will love his poetry. My favorite of his is call "Romances" it is about the Love within the Trinity that created the world and the incarnation of Jesus. It is so very beautiful.
