I don't know but I wouldn't eat gray anything.

There is no difference except that in the brining process, potassium nitrite is added to the red beef and that acts as a preservative as well as a salt. It does have the side effect of making the beef turn reddish-pink and most people who don't know any better think that corned beef without the nitrite must be bad, but its not!

I'm pretty sure "gray" is nature's way of telling us not to eat something.
